Carob powder resembles to cocoa in terms of colour and smell, being a somewhat sweetish basic material rich in dietary fibre. Its fat content is lower, its carbohydrate content is higher than that of cocoa powder. It is caffeine, teobromine, gluten and lactose free, with no cholesterol content and low sodium content. It can be used in lieu of cocoa powder, or mixed by half with cocoa powder. It has a sweet taste so you can use less sugar or sweetener.
