Organic rye flour with low gluten content from controlled organic farming. In whole wheat flour types, the meal of the cereal is also included, rich in nutrients and assisting digestion.
The proteins of rye flour do not coagulate into gluten because plant mucilage prevents the formation of large molecules. Therefore it is not expedient to make bread purely from rye flour. (max. 50%) The starch of rye flour differs from the starch of wheat flour, enclosing water to a higher degree.
